Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 jalapeño pepper, seeds removed and minced (adjust to taste)

1/2 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Instructions

Prepare the Chickpeas: In a large bowl, add the drained and rinsed chickpeas. Use a fork to gently mash about half of the chickpeas to create a creamy texture while leaving the rest whole for added crunch.

Add Fresh Ingredients: Toss in the diced avocado, halved cherry tomatoes, finely chopped red onion, and minced jalapeño. Gently mix to combine without mashing the avocado.

Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, smoked paprika, salt, and pepper until well combined.

Combine and Mix: Pour the dressing over the chickpea and avocado mixture. Add in the chopped cilantro and gently fold everything together until well coated.

Taste and Adjust: Give the salad a taste and adjust seasoning with more salt, pepper, or lime juice as needed.

Chill and Serve: For best flavor, let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
