1 cup rolled oats

1 cup unsweetened almond milk (or milk of choice)

1/2 cup canned pumpkin puree

1 teaspoon pumpkin pie spice (or mix of cinnamon, nutmeg, and ginger)

1/2 teaspoon vanilla extract

Pinch of salt

1/4 cup pecans or walnuts, chopped (optional for crunch)

2 tablespoons chia seeds (optional for added nutrition)

Fresh whip cream or yogurt for topping (optional)

Additional pumpkin pie spice for garnish

Instructions
 

In a medium-sized bowl, combine the rolled oats, almond milk, and canned pumpkin puree. Mix until well combined.

    Stir in the Greek yogurt, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt until the mixture is smooth.

      If using, add in the chia seeds for added texture and nutrition, and mix until evenly distributed.

        Divide the mixture evenly into two jars or airtight containers. Make sure to leave some space at the top for toppings.
