Smoky Black Bean Quesadillas

1 can (15 oz) black beans, drained and rinsed

1 cup shredded smoked cheddar cheese

½ cup crumbled feta cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions
 

Sauté the Vegetables: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.

    Prepare the Bean Mixture: In a medium bowl, combine the rinsed black beans, sautéed onion and garlic, smoked paprika, cumin, chili powder, salt, and pepper. Mash lightly with a fork, leaving some whole beans for texture.

      Assemble the Quesadillas: Place a tortilla in the skillet (preferably non-stick) over medium heat. On one half of the tortilla, layer the bean mixture, followed by smoked cheddar and crumbled feta. Fold the tortilla over to cover the filling.

        Cook Until Golden: Add 1 tablespoon of olive oil to the skillet, allowing it to coat the bottom. Cook the quesadilla for 3-4 minutes on one side until crispy and golden brown. Carefully flip and repeat on the other side until the cheese is melted and the tortilla is evenly browned.

          Slice and Serve: Remove the quesadilla from the skillet and let it sit for a minute before slicing into wedges. Garnish with fresh cilantro and serve with sour cream or Greek yogurt on the side.
