Smoky BBQ Chickpea and Coleslaw Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

½ cup barbecue sauce (store-bought or homemade)

4 large whole wheat tortillas or wraps

2 cups green cabbage, shredded

1 cup carrots, grated

¼ cup red onion, thinly sliced

¼ cup fresh cilantro or parsley, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup (optional, for sweetness)

½ teaspoon black pepper

Instructions
 

Prepare the Chickpeas: In a medium mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss until the chickpeas are well-coated.

    Cook the Chickpeas: Heat a large skillet over medium heat. Add the seasoned chickpeas to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are slightly crispy and heated through.

      Mix the Coleslaw: In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced red onion, chopped cilantro (or parsley), apple cider vinegar, honey (or maple syrup), and black pepper. Toss until everything is well mixed. Taste and adjust seasoning as desired.

        Combine BBQ Sauce with Chickpeas: Once the chickpeas are cooked, remove them from heat and pour the barbecue sauce over them. Stir well to coat the chickpeas evenly in sauce.

          Assemble the Wraps: Lay out a tortilla on a clean surface. Spoon a generous amount of the smoky BBQ chickpeas in the center of the tortilla. Top with a handful of the coleslaw mixture.

            Wrap It Up: Fold the sides of the tortilla inwards and then roll from the bottom to the top to enclose the filling. Repeat with the remaining tortillas.
