Slow Cooker White Chicken Chili

2 lbs boneless, skinless chicken breasts or thighs

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 can (4 oz) diced green chiles

1 cup corn (fresh or frozen)

4 cups chicken broth

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt (or to taste)

1/4 tsp black pepper

1 cup heavy cream (or coconut milk for a dairy-free option)

Juice of 1 lime

Optional toppings: chopped cilantro, shredded cheese, avocado slices, sour cream, and lime wedges

Instructions
 

Prepare the Chicken: Place the chicken breasts or thighs at the bottom of the slow cooker.

    Add the Vegetables: Spread the diced onion and minced garlic over the chicken.

      Add the Beans and Chiles: Pour in the rinsed white beans, diced green chiles, and corn.

        Season and Add Broth: Sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper over the ingredients. Then pour in the chicken broth, ensuring that everything is well covered.

          Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the chicken is fully cooked and tender.

            Shred the Chicken: About 30 minutes before serving, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the pot.

              Add Cream and Lime Juice: Stir in the heavy cream (or coconut milk) and lime juice. Let the chili cook for an additional 30 minutes on low to warm through and blend the flavors.
