Slow Cooker Veggie Bolognese

Ingredients
  

2 tablespoons olive oil

1 large onion, chopped

2 cloves garlic, minced

1 medium carrot, diced

1 medium zucchini, diced

1 red bell pepper, diced

1 cup mushrooms, chopped

1 can (14 oz) diced tomatoes

1 can (6 oz) tomato paste

1 cup vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon paprika

1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

1 cup lentils (green or brown), rinsed

1/4 cup fresh parsley, chopped (for garnish)

1 pound spaghetti or pasta of choice (for serving)

Instructions
 

Sauté the Veggies: In a skillet over medium heat, add the olive oil. Once hot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion begins to soften.

    Add More Veggies: Stir in the diced carrot, zucchini, red bell pepper, and chopped mushrooms. Cook for an additional 5 minutes, stirring occasionally. This will enhance their flavors.

      Combine Ingredients in Slow Cooker: Transfer the sautéed vegetables to your slow cooker. Add the canned diced tomatoes, tomato paste, vegetable broth, lentils, oregano, basil, paprika, and crushed red pepper flakes. Stir well to combine.

        Season to Taste: Sprinkle with salt and pepper to taste. Give everything another good stir to blend.

          Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally if possible, to help cook the lentils evenly.

            Prepare the Pasta: About 20 minutes before serving, cook your spaghetti or pasta according to the package instructions. Drain and set aside.

              Serve: Once the bolognese is done cooking, give it a final stir, and adjust the seasoning if necessary. Serve the bolognese over cooked pasta, and garnish with fresh parsley.
