2 pounds beef chuck roast, cut into 1-inch cubes

4 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional, use more broth if desired)

2 tablespoons Worcestershire sauce

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon balsamic vinegar

Salt and pepper to taste

8 ounces egg noodles

1 cup Swiss or Gruyère cheese, shredded

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Beef: Season the beef chunks generously with salt and pepper. Heat a large skillet over medium-high heat with a drizzle of oil. Sear the beef on all sides until browned (about 3-4 minutes per side), then transfer to the slow cooker.

    Sauté the Onions: In the same skillet, add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown (about 15-20 minutes). Add the minced garlic during the last few minutes of cooking, then transfer the onions to the slow cooker with the beef.

      Build the Sauce: Pour the beef broth and red wine (if using) into the slow cooker. Stir in the Worcestershire sauce, thyme, and balsamic vinegar. Mix well to combine all the ingredients.

        Slow Cook: Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easy to shred.

          Cook the Noodles: About 30 minutes before serving, cook the egg noodles according to the package instructions. Drain and set aside.

            Combine & Serve: Once the beef is finished cooking, stir in the cooked egg noodles to the slow cooker. If desired, top with shredded cheese and allow it to melt for about 10 minutes before serving.

              Garnish: Serve hot, garnished with freshly chopped parsley for a burst of color and flavor.
