1 lb (450g) ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 cup fig jam (store-bought or homemade)

1 cup low-sodium beef or vegetable broth

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and black pepper, to taste

Olive oil, for sautéing

Fresh cilantro or parsley, for garnish

Optional toppings: Sour cream, shredded cheese, sliced jalapeños

Instructions
 

Brown the Meat: In a medium skillet over medium heat, add a drizzle of olive oil. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon. Drain excess fat and transfer the meat to the slow cooker.

    Sauté Vegetables: In the same skillet, add the diced onion, garlic, and bell peppers. Sauté for about 5-7 minutes, until the vegetables are softened. Transfer to the slow cooker.

      Combine Ingredients: Add the kidney beans, black beans, diced tomatoes (and their juices), fig jam, broth, chili powder, cumin, smoked paprika, and cayenne pepper to the slow cooker. Stir well to combine all ingredients.

        Season: Taste the chili and adjust with salt and black pepper as needed.

          Cook: Set the slow cooker on low for 6-8 hours or high for 3-4 hours. The chili is done when it’s thickened and flavors have melded beautifully.
