Ingredients
  

2 medium zucchinis, grated

1 cup shredded cheese (cheddar or mozzarella)

1 small onion, finely chopped

1 bell pepper, diced (any color)

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 whole wheat tortillas

Olive oil for frying

Fresh cilantro for garnish (optional)

Salsa or sour cream for serving (optional)

Instructions
 

Prepare the Zucchini Mixture:

    In a large bowl, combine the grated zucchini, chopped onion, diced bell pepper, garlic powder, cumin, salt, and pepper. Mix well until everything is evenly coated.

      Dry the Zucchini:

        Place the zucchini mixture in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to prevent soggy quesadillas.

          Assemble the Quesadillas:

            Lay one tortilla flat on a clean surface. On half of the tortilla, sprinkle a layer of cheese followed by a generous portion of the zucchini mixture. Top with another sprinkle of cheese before folding the tortilla over to cover the filling.

              Cook the Quesadillas:

                Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortilla is golden brown and crispy, and the cheese has melted. Repeat with remaining tortillas.

                  Slice and Serve:

                    Once cooked, remove the quesadilla from the skillet and let it sit for a minute before slicing it into wedges. Garnish with fresh cilantro if desired, and serve with salsa or sour cream on the side.
