Simple Peach Jam Cookies

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup peach jam (store-bought or homemade)

1/2 cup rolled oats

1/2 teaspoon cinnamon (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

      Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add this mixture to the wet ingredients, mixing until just combined.

          Incorporate Oats: Gently fold in the rolled oats, ensuring an even distribution throughout the dough.

            Scoop and Fill: Using a cookie scoop or tablespoon, drop about half of the dough onto the prepared baking sheets, spacing them 2 inches apart. Make an indentation in the center of each cookie using your thumb or the back of a spoon.

              Add Peach Jam: Spoon about 1 teaspoon of peach jam into the center of each cookie, filling the indentation.

                Top with More Dough: Take a small amount of the remaining dough and flatten it slightly, then place it on top of the peach jam, creating a rustic look while allowing some jam to peek through.

                  Bake the Cookies: Bake in the preheated oven for 12-15 minutes or until the edges are golden brown. The tops may still look a little soft, but they will firm up as they cool.
