1 cup fig jam

4 medium flour tortillas (10-inch)

1 cup shredded sharp cheddar cheese

1 cup crumbled goat cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons unsalted butter

Honey (for drizzling, optional)

Fresh figs, sliced (for garnish, optional)

Instructions
 

Prep the Ingredients: Gather all your ingredients and ensure that the fig jam is at room temperature for easy spreading.

    Heat the Pan: In a large skillet over medium heat, melt 1 tablespoon of butter. Allow it to foam lightly but not brown.

      Assemble the Quesadillas: On one half of each tortilla, spread approximately ¼ cup of fig jam evenly. Sprinkle ¼ cup of shredded cheddar and ¼ cup of crumbled goat cheese over the jam. Add a sprinkle of fresh thyme.

        Fold: Carefully fold each tortilla in half over the filling, pressing gently to seal.

          Cook the Quesadillas: Place the quesadillas in the heated skillet. Cook for about 3–4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese has melted. If needed, add the remaining tablespoon of butter to the pan for cooking.

            Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges. Drizzle with honey and garnish with fresh fig slices if desired.
