2 cups fresh blueberries

1/4 cup granulated sugar (adjust to taste)

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 cup heavy cream

1 cup Greek yogurt

1 teaspoon vanilla extract

A pinch of salt

Extra blueberries and mint leaves for garnish (optional)

In a medium saucepan, combine the fresh blueberries, 2 tablespoons of sugar, fresh lemon juice, and lemon zest. Cook over medium heat for about 5-7 minutes, gently stirring until the blueberries burst and the mixture thickens slightly. Remove from heat and let cool.

    In a large mixing bowl, whip the heavy cream with the remaining sugar (2 tablespoons) until soft peaks form. Be careful not to overwhip; you want a smooth and silky texture.

      In another bowl, mix the Greek yogurt with the vanilla extract and a pinch of salt until well combined.

        Gently fold the whipped cream into the Greek yogurt mixture, being careful not to deflate the cream. You want a light and airy consistency.

          Once the blueberry mixture has cooled completely, fold it into the creamy mixture, leaving some streaks for a marbled effect.
