Silky Earl Grey Panna Cotta

2 cups heavy cream

1 cup whole milk

2 tablespoons dried Earl Grey tea leaves (or 2 tea bags)

1/2 cup granulated sugar

2 teaspoons gelatin powder

3 tablespoons cold water

1 teaspoon vanilla extract

A pinch of salt

Optional: Edible flowers or citrus zest for garnish

Instructions
 

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Stir gently and heat over medium heat until the mixture is just about to simmer but not boiling, stirring occasionally.

    Once the mixture is warm, remove it from heat and add the dried Earl Grey tea leaves (or tea bags), covering the saucepan. Allow it to steep for 10-15 minutes, depending on how strong you want the tea flavor to be.

      In a small bowl, sprinkle gelatin over cold water and let it bloom for about 5 minutes until it absorbs the water and becomes spongy.

        Strain the tea-infused cream mixture through a fine mesh sieve into a clean bowl to remove tea leaves (or remove tea bags). Return the strained mixture to the saucepan over low heat.

          Stir in the bloomed gelatin, vanilla extract, and a pinch of salt. Stir continuously until the gelatin has completely dissolved, about 2-3 minutes.

            Carefully pour the panna cotta mixture into individual serving glasses or ramekins. Allow them to cool at room temperature for about 30 minutes, and then refrigerate for at least 4 hours or until set.

              When ready to serve, gently run a knife around the edges of the panna cotta and invert if desired, or serve directly in the glasses. Garnish with edible flowers or a sprinkle of citrus zest for an extra touch.
