Prep the Pork Chops: Season the pork chops generously on both sides with salt and pepper. Let them sit at room temperature for about 15 minutes to enhance the flavor and tenderness.
Sear the Pork Chops: In a large skillet over medium-high heat, add the olive oil. Once hot, carefully add the pork chops to the skillet and sear for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C) and have a nice golden-brown crust. Remove the chops from the skillet and set them on a plate to rest.
Sauté Apples and Onions: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced onions and sauté for about 4-5 minutes, until they start to soften. Then, add the sliced apples, cinnamon, and thyme. Continue to cook for another 5-7 minutes, stirring occasionally until the apples are tender and caramelized.
Deglaze the Skillet: Pour in the apple cider and balsamic vinegar, scraping up any brown bits from the bottom of the skillet with a wooden spoon. Let it simmer for about 2-3 minutes, allowing the mixture to reduce slightly.
Combine and Serve: Return the pork chops to the skillet, nestling them into the apples and onions. Spoon some of the sauce over the chops and simmer everything together for an additional 2-3 minutes to heat through and meld the flavors.
Garnish and Plate: Remove the skillet from heat. Garnish with fresh parsley before serving.
Notes
Let the pork chops rest before serving for better flavor.
