Savory Italian Sausage and Kale Galette

1 pre-made pie crust or pastry dough (store-bought or homemade)

2 tablespoons olive oil

1 pound Italian sausage (sweet or spicy, based on preference)

3 cups kale, chopped and stems removed

1 medium onion, thinly sliced

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

Salt and pepper to taste

1 egg (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Cook the Sausage: In a large skillet over medium heat, add olive oil. Once the oil is hot, add the Italian sausage. Break it up with a wooden spoon and cook until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set it aside, leaving some drippings in the pan.

      Sauté the Vegetables: In the same skillet, add the sliced onion and cook until soft and translucent (about 3-4 minutes). Add the minced garlic and, if using, red pepper flakes, and sauté for an additional minute.

        Add the Kale: Gradually add the chopped kale to the skillet. Stir well and cook until wilted and tender (approximately 3-5 minutes). Season with salt, pepper, and dried oregano.

          Combine Ingredients: Return the cooked sausage to the skillet and mix well with the kale and onion. Remove from heat and allow to cool slightly. Stir in the ricotta cheese and half of the Parmesan cheese until well combined.

            Prepare the Galette: On a lightly floured surface, roll out your pie crust or pastry dough into a large circle about 12 inches in diameter. Transfer to the prepared baking sheet.

              Assemble: Spoon the sausage and kale mixture into the center of the dough, leaving about a 2-inch border. Sprinkle the remaining Parmesan over the filling. Fold the edges of the dough up and over the filling, pleating the edges to create a rustic look.

                Egg Wash: Beat the egg in a small bowl and brush over the crust to give it a golden finish.

                  Bake: Place the galette in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and crispy.

                    Serve: Remove from oven and let it cool for a few minutes. Garnish with fresh parsley before slicing and serving warm.
