Ingredients

1 medium butternut squash, peeled and diced into ½-inch cubes

2 medium apples, cored and chopped (suggestions: Honeycrisp or Granny Smith)

1 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 teaspoon dried thyme

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

1 cup vegetable broth

½ cup walnuts, roughly chopped (optional)

Fresh parsley or sage for garnish (optional)

Instructions

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Add Garlic and Spices: Stir in the minced garlic, ground cinnamon, nutmeg, thyme, salt, and black pepper. Cook for an additional minute until fragrant.

Sauté Butternut Squash: Add the diced butternut squash to the skillet. Stir well to combine everything, then cover and cook for about 10-12 minutes, stirring occasionally, until the squash begins to soften.

Incorporate Apples and Broth: Add the chopped apples and pour in the vegetable broth. Mix everything gently, cover the skillet again, and let it simmer for another 8-10 minutes, or until both the squash and apples are tender.

Add Nuts (if using): If you are including walnuts, fold them into the skillet during the last 2 minutes of cooking to toast them lightly.

Taste and Adjust: Taste the mixture and adjust the seasoning if necessary. If you like a sweeter profile, feel free to sprinkle a little brown sugar or maple syrup.

Serve: Once cooked, remove from the heat and garnish with fresh parsley or sage. Serve warm as a delightful side dish or a light main course.
