Roasted Corn & Cheddar Grits Cakes

1 cup stone-ground grits

4 cups vegetable broth (or water)

1 cup fresh corn kernels (or canned, drained)

1 cup shredded sharp cheddar cheese

1/2 cup diced green onions (green parts only)

2 large eggs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

1/4 cup olive oil (for frying)

Fresh cilantro (for garnish, optional)

Cook Grits: In a saucepan, bring the vegetable broth or water to a boil. Stir in the stone-ground grits and reduce to a simmer. Cook for about 20-25 minutes, stirring frequently until the grits are creamy and thick.

    Incorporate Ingredients: Once the grits are cooked, remove from heat and stir in the roasted corn kernels, shredded cheese, diced green onions, garlic powder, smoked paprika, salt, and pepper. Mix well to combine.

      Prepare the Batter: Let the mixture cool slightly, then whisk in the eggs. Gradually fold in the flour until well incorporated. The mixture should be thick but pourable.

        Chill the Mixture: Transfer the mixture to a greased baking dish, smoothing the top. Cover and refrigerate for at least 1-2 hours or until firm (this will make shaping the cakes easier).
