Ingredients

8 chicken drumsticks

1/2 cup unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare the Garlic Butter Mixture: In a mixing bowl, combine the melted butter, minced garlic, chopped parsley, rosemary, paprika, onion powder, dried thyme, salt, black pepper, and lemon juice. Stir until well mixed.

Coat the Drumsticks: Place the chicken drumsticks in a large bowl. Pour about two-thirds of the garlic butter mixture over the drumsticks. Use your hands or tongs to toss the drumsticks until they are thoroughly coated in the garlic butter mixture.

Arrange on Baking Sheet: Lay the coated drumsticks on the prepared baking sheet in a single layer, ensuring they are not touching each other for even cooking.

Roast the Drumsticks: Roast the chicken in the preheated oven for 35-40 minutes, turning halfway through, until the drumsticks are golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Baste with Remaining Butter: During the last 10 minutes of cooking, use the remaining garlic butter mixture to baste the drumsticks for extra flavor and moisture.

Serve: Once cooked, remove the drumsticks from the oven and let them rest for 5 minutes. Serve hot with lemon wedges on the side and sprinkle with additional parsley if desired.
