1 large head of broccoli, cut into florets

1 can (15 oz) white beans (cannellini or navy), drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cooked quinoa (or brown rice)

1 cup cherry tomatoes, halved

½ lemon, juiced

Fresh parsley or basil, chopped (for garnish)

Optional: Crumbled feta or nutritional yeast for topping

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Broccoli: In a large mixing bowl, toss the broccoli florets with 1 tablespoon of olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until the florets are evenly coated.

      Roast the Broccoli: Spread the seasoned broccoli onto a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until the edges are crispy and they are fork-tender.

        Heat the Beans: In a small saucepan, combine the drained white beans with the remaining 1 tablespoon of olive oil, a pinch of salt, and pepper. Heat over medium-low heat until warmed through, about 5-7 minutes.
