Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups mixed vegetables (bell peppers, zucchini, and broccoli work well)

1 packet ranch dressing mix (about 1 oz)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

4 sheets of heavy-duty aluminum foil

Instructions
 

Preheat Oven or Grill: Start by preheating your oven to 400°F (200°C) or preparing your grill for medium heat.

    Prepare the Marinade: In a large bowl, combine the chicken pieces, mixed vegetables, ranch dressing mix, olive oil, garlic powder, onion powder, salt, and pepper. Mix everything thoroughly until the chicken and vegetables are well-coated with the seasoning.

      Create Foil Packs: Lay out four sheets of foil, about 12 inches long. Divide the chicken and veggie mixture evenly among the sheets, placing it in the center of each foil.

        Seal the Packs: Fold up the sides of the foil over the chicken and vegetables, then fold over the top edges to seal the pack tightly. This will keep the steam inside and ensure even cooking.

          Cook: Place the foil packs on a baking sheet and bake in the preheated oven for about 25-30 minutes. If using the grill, place the packs directly on the grill grates and cook for the same amount of time.

            Check for Doneness: Carefully open one pack (watch for steam) to check if the chicken is fully cooked (internal temperature should reach 165°F or 74°C). If not fully cooked, reseal and return to the oven or grill for an additional 5-10 minutes.

              Serve: Once done, carefully remove the packs from the oven or grill. Garnish with freshly chopped parsley before serving.
