1 tsp instant yeast

1 tsp sugar

1/2 tsp salt

3/4 cup warm water (about 110°F)

1 tbsp olive oil

For the Toppings:

1/2 cup pizza sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup thinly sliced bell peppers (red, yellow, green)

1/2 cup thinly sliced red onion

1/2 cup cherry tomatoes, halved

1/2 cup baby spinach

1/4 cup shredded carrots

1/4 cup sweet corn (canned or frozen)

1/4 cup black olives, sliced

1 tsp dried oregano

1 tsp garlic powder

Fresh basil leaves (for garnish)

Olive oil (for drizzling)

Prepare the Dough: In a large mixing bowl, combine 2 cups of all-purpose flour, instant yeast, sugar, and salt. Gradually add the warm water and olive oil. Mix until a dough forms. Knead for about 5-7 minutes on a floured surface until smooth and elastic. Place in an oiled bowl, cover with a damp cloth, and let it rise in a warm area for 1 hour.

    Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.

      Shape the Pizza: Once the dough has risen, punch it down and transfer it to a floured surface. Roll out the dough into a 12-inch circle or your desired pizza shape. If you like a thicker crust, keep it slightly thicker at the edges.

        Add the Sauce: Spread the pizza sauce evenly over the dough, leaving a small border for the crust.

          Layer the Cheese: Sprinkle the shredded mozzarella cheese generously over the sauce.

            Put on the Veggies: Start layering on the rainbow veggies: first with bell peppers, followed by the red onion, cherry tomatoes, baby spinach, shredded carrots, sweet corn, and black olives. Make sure the pizza is colorful!

                Bake the Pizza: If you are using a pizza stone, carefully transfer the pizza onto the stone using a pizza peel. If you’re using a baking sheet, place the sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

                  Finishing Touches: Once out of the oven, allow it to cool for a minute. Drizzle lightly with olive oil and garnish with fresh basil leaves.
