Ingredients
  

  • 2.0 large flour tortillas
  • 4.0 large eggs
  • 0.25 cup shredded cheese
  • 0.5 cup cooked breakfast sausage
  • 0.25 cup diced bell pepper
  • 0.25 cup diced onion
  • 1.0 tablespoon olive oil
  • 0.0 teaspoon salt
  • 0.0 teaspoon pepper

Instructions
 

  • Prep the veggies: Dice the bell peppers and onion finely.
  • Cook the veggies: In a medium skillet, heat the olive oil over medium heat. Add the diced bell pepper and onion. Sauté for about 2 minutes until they begin to soften.
  • Scramble the eggs: Crack the eggs directly into the skillet and add a pinch of salt and pepper. Stir together with the veggies and cook, stirring occasionally, until the eggs are just set (about 1-2 minutes).
  • Add sausage and cheese: Remove the skillet from heat and stir in the crumbled sausage and shredded cheese until the cheese is melted.
  • Assemble the burrito: On a flat tortilla, place a generous amount of the egg mixture in the center. Fold in the sides and roll tightly to form a burrito. Repeat with the second tortilla.
  • Optional step: If desired, place the burrito seam-side down in the skillet for 0.5 minutes on medium heat, to crisp the bottom slightly.
  • Serve: Slice the burrito in half and serve with your choice of toppings like salsa, avocado, or hot sauce.
