1 lb ground turkey

1 cup quinoa, rinsed

2 cups chicken broth (or water)

1 bell pepper (red or yellow), diced

1 cup broccoli florets

1 medium carrot, julienned

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sriracha (optional, for heat)

Salt and pepper to taste

Chopped green onions for garnish

Sesame seeds for garnish

Cook the Quinoa: In a medium pot, bring the chicken broth (or water) to a boil. Add the rinsed quinoa, cover, and reduce the heat to low. Cook for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Fluff with a fork and set aside.
