4 medium flour tortillas

1 cup shredded pepper jack cheese

1/2 cup cooked and seasoned chicken breast, shredded (optional)

1 small red bell pepper, thinly sliced

1 small green bell pepper, thinly sliced

1/4 cup red onion, thinly sliced

1 tablespoon olive oil or cooking spray

1 teaspoon taco seasoning (optional)

Fresh cilantro, for garnish

Salsa and sour cream, for serving

Instructions
 

Preheat the Skillet: Heat a large non-stick skillet over medium heat. If using a non-stick skillet, you can add a little olive oil or cooking spray to prevent sticking.

    Prepare the Filling: In a mixing bowl, combine the shredded cheese, chicken (if using), sliced bell peppers, red onion, and taco seasoning. Mix well until everything is evenly combined.

      Assemble the Quesadilla: Take one tortilla and spread a generous portion of the filling mixture on half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the other tortillas.

        Cook the Quesadilla: Place the folded quesadilla in the preheated skillet. Cook for 3-4 minutes or until the bottom side is golden brown. Flip the quesadilla carefully and cook for another 3-4 minutes until the cheese is melted and the other side is also golden brown.

          Cut and Serve: Remove the quesadilla from the skillet and let it cool for a minute before cutting into wedges. Garnish with fresh cilantro and serve warm with salsa and sour cream on the side.
