2 pounds fresh mussels, cleaned and debearded

4 tablespoons unsalted butter

4 cloves garlic, minced

1 small shallot, finely chopped

1 cup dry white wine (such as Sauvignon Blanc)

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup fresh parsley, chopped

Salt, to taste

Freshly ground black pepper, to taste

Lemon wedges, for serving

Crusty bread, for dipping

Clean the Mussels: Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics: In a large pot or deep skillet, melt the butter over medium heat. Add the minced garlic and chopped shallot, cooking for about 2-3 minutes until they become fragrant and translucent but not browned.

      Add Wine and Red Pepper Flakes: Pour in the white wine and add the red pepper flakes. Allow the mixture to simmer for about 5 minutes to let the alcohol evaporate slightly and the flavors meld together.

        Cook the Mussels: Increase the heat to high and add the cleaned mussels to the pot. Cover it with a lid and let the mussels steam for 5-7 minutes, shaking the pot occasionally, until all mussels have opened. Discard any that remain closed.
