Quick Beef and Broccoli Stir Fry

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 red bell pepper, sliced

2 tablespoons vegetable oil (divided)

4 cloves garlic, minced

1-inch piece of ginger, minced

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon sesame oil

Cooked jasmine rice or quinoa for serving

Sesame seeds and sliced green onions for garnish

Instructions
 

Prep the Beef: In a bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, cornstarch, and water. Let it marinate for about 15 minutes to tenderize and flavor the meat.

    Prepare the Sauce: In another small bowl, mix the remaining soy sauce, oyster sauce, and sesame oil. Set aside.

      Blanch the Broccoli: In a large pot of boiling salted water, blanch the broccoli florets for 2-3 minutes until they turn bright green and slightly tender. Drain and immediately plunge into ice water to stop the cooking process. Set aside.

        Cook the Beef: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef in a single layer and stir-fry for about 2-3 minutes until browned. Remove the beef from the pan and set aside.

          Stir-Fry the Veggies: In the same pan, add the remaining tablespoon of oil. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add the sliced red bell pepper and blanched broccoli. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.

            Combine Ingredients: Return the beef to the pan with the vegetables. Pour the prepared sauce over the mixture and stir to coat everything evenly. Cook for an additional 1-2 minutes until heated through and the sauce has slightly thickened.

              Serve: Serve the beef and broccoli stir-fry over jasmine rice or quinoa. Garnish with sesame seeds and sliced green onions for extra flavor and crunch.
