8 oz (225g) spaghetti or your preferred pasta

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1 medium zucchini, sliced into half-moons

1 cup broccoli florets

1 cup snap peas, trimmed

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish (optional)

Zest and juice of 1 lemon

Cook Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
