Ingredients

For the Pumpkin Layer:

1 cup canned pumpkin puree

1/2 cup brown sugar

1/4 cup granulated sugar

1/4 cup unsweetened applesauce

1/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

For the Yogurt Swirl:

1 cup plain Greek yogurt

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Prepare the Pumpkin Layer: In a large mixing bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, applesauce, vegetable oil, eggs, and vanilla extract until smooth.

Add Dry Ingredients: In a separate bowl, sift together the ground cinnamon, nutmeg, ginger, cloves, baking powder, baking soda, salt, and flour. Gradually fold this dry mixture into the pumpkin mixture until just combined; do not overmix.

Spread the Pumpkin Mixture: Pour the pumpkin batter into the prepared baking pan, spreading it evenly with a spatula.

Make the Yogurt Swirl: In a medium bowl, mix together the Greek yogurt, granulated sugar, vanilla extract, and egg until well combined.

Swirl the Yogurt Mixture: Dollop spoonfuls of the yogurt mixture on top of the pumpkin batter. Use a knife or a toothpick to swirl the yogurt into the pumpkin layer, creating a marbled effect.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Slice: Allow the bars to cool in the pan for about 15 minutes before lifting them out using the parchment overhang. Let them cool completely on a wire rack, then slice into squares.

Serve and Enjoy: These delicious Pumpkin Yogurt Swirl Bars can be served warm or chilled. They also make great snacks or desserts for fall gatherings!
