Ingredients

1 cup rolled oats

1/2 cup canned pumpkin puree

1/3 cup almond butter (or any nut/seed butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 tablespoon pumpkin spice (cinnamon, nutmeg, ginger, and allspice)

1/4 cup ground flaxseed

1/4 cup chopped pecans or walnuts (optional)

1/4 cup chocolate chips or dried cranberries (optional)

Pinch of salt

Instructions

Combine Ingredients: In a large mixing bowl, add the rolled oats, canned pumpkin puree, almond butter, honey (or maple syrup), vanilla extract, pumpkin spice, ground flaxseed, and a pinch of salt.

Mix Well: Using a spoon or spatula, stir all the ingredients together until they are well combined. If the mixture feels too wet, add a bit more oats or flaxseed. If too dry, add a splash more almond butter or honey.

Incorporate Add-ins: If desired, fold in the chopped pecans or walnuts and chocolate chips or dried cranberries to add extra texture and flavor.

Form the Energy Balls: Once the mixture is evenly mixed, use your hands to scoop out about 1 tablespoon of the mixture and roll it into a ball. Continue until all the mixture is rolled into balls.

Chill: Place the energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to allow them to set.

Serve and Store: Enjoy your pumpkin spice energy balls as a snack or a quick breakfast! Store any leftovers in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
