1 ripe banana

1 cup canned pumpkin puree (not pumpkin pie filling)

1/4 cup maple syrup or honey

1/4 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 1/2 cups rolled oats (blended into flour)

1/2 cup walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Prepare the Oats: If you haven't done so already, blend the rolled oats in a blender or food processor until they resemble a fine flour consistency. Set aside.

    Blend the Wet Ingredients: In the blender, add the ripe banana, pumpkin puree, maple syrup or honey, vegetable oil, eggs, and vanilla extract. Blend until fully combined and smooth.

      Mix Dry Ingredients: In a large bowl, combine the blended oat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk together until well mixed.

        Combine Mixtures: Pour the wet mixture from the blender into the dry ingredients. Stir gently until just combined. Be careful not to over-mix; it's okay if there are a few lumps.

          Add Optional Ingredients: If using, fold in the nuts and chocolate chips into the batter.

            Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

              Fill Muffin Cups: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

                Bake: Bake in the preheated oven for 15–20 minutes or until a toothpick inserted into the center comes out clean.

                  Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
