Ingredients

4 cups fresh pineapple, diced

2 cups water

1/4 cup fresh mint leaves, plus extra for garnish

2 tablespoons lime juice (about 1 lime)

2-3 tablespoons agave syrup or honey (adjust to taste)

Ice cubes

Lime slices for garnish (optional)

Instructions

Prepare the Pineapple: Start by peeling and cutting the fresh pineapple into small chunks. Ensure you remove the core.

Blend the Ingredients: In a blender, combine the diced pineapple, water, fresh mint leaves, lime juice, and agave syrup. Blend on high until the mixture is smooth and the pineapple is completely puréed, about 1-2 minutes.

Strain the Mixture: Place a fine mesh strainer or cheesecloth over a large pitcher. Pour the blended pineapple mixture through the strainer to remove any pulp, pressing with a spatula or spoon to get as much liquid out as possible. Discard the pulp or use it in smoothies.

Taste and Adjust: Taste the strained agua fresca and adjust sweetness if necessary by adding more agave syrup or honey. Stir well.

Chill and Serve: Fill glasses with ice cubes and pour the pineapple mint agua fresca over the ice. Garnish with fresh mint leaves and lime slices if desired.

Enjoy: Refresh yourself with this vibrant, tropical drink!
