Pineapple Chicken Fried Rice

2 cups cooked jasmine rice (preferably day-old)

1 cup cooked chicken breast, diced

1 cup pineapple, diced (fresh or canned)

1/2 cup frozen peas and carrots mix

1/4 cup green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 eggs, lightly beaten

Salt and pepper, to taste

Fresh cilantro or basil for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare the Ingredients: If not using day-old rice, cook jasmine rice according to package instructions and let it cool. Gather all the other ingredients measured and ready to go.

    Sauté Vegetables: Heat a large skillet or wok over medium heat. Add sesame oil and allow it to heat up for about 30 seconds. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Cook the Eggs: Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the garlic.

        Add Chicken and Vegetables: Add the diced chicken breast and the peas and carrots mix to the skillet. Stir-fry for about 2-3 minutes until heated through.

          Incorporate Rice and Pineapple: Add the cooked jasmine rice and diced pineapple to the skillet. Stir well to combine all ingredients. Allow the rice to fry for a few minutes without stirring, letting it get slightly crispy on the bottom.

            Season the Mixture: Pour the soy sauce and optional oyster sauce over the rice, mixing thoroughly. Continue cooking for another 2-3 minutes, stirring occasionally to ensure even seasoning. Add salt and pepper to taste.

              Add Green Onions: Once the rice is heated through, add the chopped green onions and gently fold them into the mixture. Cook for an additional minute.
