3 ripe peaches, pitted and chopped

1 cup plain Greek yogurt (or non-dairy yogurt for a vegan option)

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1 tbsp lemon juice

Pinch of salt

Optional: fresh peach slices or mint leaves for garnish

Instructions
 

Prepare the Peaches: Start by washing, pitting, and chopping the peaches. If you prefer a smoother texture, you can peel the peaches, but the skin adds extra fiber and nutrients.

    Blend the Ingredients: In a blender or food processor, combine the chopped peaches, Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste the mixture to adjust sweetness if necessary.

      Layer the Popsicles: If you want a swirled effect, pour half of the mixture into popsicle molds, then layer some chopped peach pieces (if using) and finish with the remaining yogurt mixture. Use a skewer or toothpick to swirl the mixture slightly for a beautiful, marbled effect.

        Insert Sticks and Freeze: Place the popsicle sticks in the center of each mold. If your molds do not support sticks, skip this step and add the sticks after 2 hours of freezing when the mixture is firm enough.

          Freeze: Cover the molds with a lid or aluminum foil and freeze for at least 4-6 hours, or overnight for best results.

            Unmold the Popsicles: Once fully frozen, run the molds under warm water for a few seconds to loosen the popsicles. Gently pull them out, and if they resist, return them to the warm water briefly.

              Serve and Enjoy: Serve immediately and garnish with fresh peach slices or mint leaves if desired. These popsicles can be stored in an airtight container in the freezer for up to a month.
