Peach Veggie Stir Fry

Ingredients
  

2 ripe peaches, pitted and sliced

1 bell pepper (any color), sliced

1 cup snap peas, trimmed

1 medium zucchini, sliced into half-moons

1 cup baby spinach

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon honey or maple syrup (optional for extra sweetness)

1 teaspoon chili flakes (optional, for heat)

Salt and pepper, to taste

Sesame seeds, for garnish

Green onions, chopped, for garnish

Instructions
 

Prep the Ingredients: Prepare all vegetables and peaches by washing, slicing, and pitting as necessary. Set aside.

    Heat the Oils: In a large skillet or wok, heat the olive oil and sesame oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and grated ginger to the heated pan. Sauté for about 30 seconds until fragrant, being careful not to burn.

        Cook the Vegetables: Add the sliced bell pepper, zucchini, and snap peas. Stir-fry for 3-4 minutes, until they begin to soften but still retain some crunch.

          Add Peaches and Spinach: Gently fold in the peach slices and baby spinach. Continue stir-frying for another 2 minutes until the spinach wilts and the peaches start to soften.

            Season the Stir Fry: Pour in the soy sauce and add honey (if using). Stir well to combine all the flavors. If desired, sprinkle in chili flakes for heat. Season with salt and pepper to taste.

              Final Touches: Cook for an additional minute or two until everything is heated through and well combined. Remove from heat.

                Serve: Plate the stir fry and garnish with sesame seeds and chopped green onions. Serve immediately and enjoy!
