1 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 cup Greek yogurt (plain)

2 tablespoons olive oil

1/4 cup warm water (more if needed)

2 medium ripe peaches, thinly sliced

2 tablespoons honey (plus extra for drizzling)

1 tablespoon fresh thyme leaves (or mint, if preferred)

1/2 cup ricotta cheese

1/4 cup crumbled feta cheese

Freshly cracked black pepper to taste

Optional: a sprinkle of crushed red pepper flakes for a hint of spice

Prepare the Flatbread Dough: In a mixing bowl, whisk together the flour, salt, and baking powder. Add the Greek yogurt and olive oil, stirring to combine. Gradually pour in the warm water, mixing until the dough comes together. If it’s too sticky, add a little more flour; if too dry, add more water.

    Knead and Rest: Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth. Shape it into a ball, cover with a towel or plastic wrap, and let it rest for 30 minutes.

      Preheat the Oven: While the dough is resting, preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to heat up.

        Roll Out the Dough: After the resting period, divide the dough into 2-4 equal portions (depending on desired size). Roll each portion into a flat, oval shape, about 1/4 inch thick, on a floured surface.

          Prepare the Toppings: In a small bowl, mix the ricotta and feta cheese together. Season with a bit of black pepper to taste.

            Assemble the Flatbreads: Place the rolled-out dough on a baking sheet or preheated pizza stone. Spread a layer of the cheese mixture over each flatbread, leaving a small border around the edges. Evenly distribute the peach slices on top, and drizzle honey over everything.
