Ingredients

8 chicken legs (drumsticks)

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Chicken: Pat the chicken legs dry with paper towels; this helps to achieve an extra crispy skin.

Make the Marinade: In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, thyme, rosemary, salt, black pepper, cayenne pepper (if using), and lemon juice. Whisk the ingredients together until well incorporated.

Coat the Chicken: Add the chicken legs to the bowl with the marinade. Use your hands or tongs to ensure each piece is evenly coated in the mixture. Let the chicken marinate for at least 30 minutes for the best flavor. (For deeper flavor, marinate in the refrigerator for up to 4 hours.)

Arrange on Baking Sheet: Line a large baking sheet with aluminum foil for easy cleanup and place an oven-safe rack on top. Arrange the chicken legs on the rack, making sure they are spaced apart to allow for even cooking.

Bake the Chicken: Place the baking sheet in the preheated oven and bake for 35-40 minutes, or until the chicken is golden brown and an internal temperature of 175°F (80°C) is reached. For extra crispiness, turn on the broiler for the last 3-5 minutes of cooking, keeping a close eye to avoid burning.

Rest & Serve: Once cooked, remove the chicken from the oven and let it rest for 5-10 minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Serve the crispy herb-infused chicken legs with your favorite sides such as roasted vegetables, mashed potatoes, or a fresh garden salad.
