Ingredients

2 cups elbow macaroni

4 cups low-sodium chicken or vegetable broth

1 cup whole milk

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, cubed

1 tablespoon butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons parsley, chopped (optional garnish)

Instructions

Combine Ingredients: In a large pot, combine the uncooked elbow macaroni and the chicken or vegetable broth. Bring to a boil over medium-high heat.

Cook Macaroni: Once boiling, reduce heat to medium and let the macaroni cook for about 8-10 minutes, stirring occasionally, until al dente. The broth should reduce, creating a creamy base.

Add Dairy: Lower the heat and stir in the whole milk, sharp cheddar cheese, mozzarella cheese, and cubed cream cheese. Stir until all the cheese is melted and the mixture is creamy.

Season: Add the butter, garlic powder, onion powder, and smoked paprika. Season with salt and pepper to taste. Stir well to combine all the flavors.

Breadcrumb Topping (Optional): If you prefer a crispy topping, preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased baking dish, sprinkle the breadcrumbs evenly over the top, and bake for 15-20 minutes until golden brown.

Serve: Once cooked, garnish with chopped parsley for a burst of color. Serve warm, and enjoy your creamy, cheesy delight!
