1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 tablespoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

8 oz (225g) wide egg noodles or pasta of choice (optional)

Instructions
 

Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add the Mushrooms: Stir in the sliced cremini mushrooms and cook for about 5 minutes until they are softened and golden brown, stirring occasionally.

        Season: Sprinkle the dried thyme and rosemary over the mushroom mixture, ensuring it is evenly distributed.

          Create the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
