4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 cup cherry tomatoes, halved

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spinach Filling: In a medium bowl, combine the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

      Stuff the Chicken: Carefully slice a pocket into each chicken breast, ensuring not to cut all the way through. Season the outside of the chicken breasts with olive oil, salt, and pepper. Generously stuff each chicken breast with the spinach filling, securing the opening with toothpicks if necessary.

        Sear the Chicken: In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts, cooking for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside for a moment.

          Add Cherry Tomatoes: In the same skillet, add the halved cherry tomatoes, tossing for a minute until slightly softened. Arrange the tomatoes around the chicken in the skillet.

            Bake in the Oven: Return the stuffed chicken to the skillet on top of the cherry tomatoes. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Serve: Remove the skillet from the oven. Let the chicken rest for a few minutes before removing the toothpicks. Garnish with fresh basil if desired. Serve warm, alongside the roasted cherry tomatoes.
