1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup ground flaxseed

1/2 cup chocolate chips (dark or dairy-free)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Optional: 1/4 cup shredded coconut or nuts for added crunch

Prepare the Zucchini: Start by grating one medium-sized zucchini. Place the grated zucchini in a clean kitchen towel or paper towels, and squeeze out as much moisture as possible. This step is crucial to ensure the energy bites hold together well.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed, cinnamon, and a pinch of salt. If you're using shredded coconut or nuts, add them here as well.
