2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, cashews, chopped)

1/2 cup seeds (pumpkin seeds and sunflower seeds)

1/2 cup dried fruits (raisins, cranberries, or apricots, chopped)

1/2 cup nut butter (peanut butter or almond butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup mini chocolate chips

Instructions
 

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later. This will prevent the bars from sticking to the pan.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, seeds, dried fruits, and a pinch of salt. Stir well to ensure an even distribution of all the ingredients.

      Melt the Wet Ingredients: In a small saucepan over low heat, combine the nut butter and honey (or maple syrup). Stir continuously until smooth and fully melted, about 2-3 minutes. Remove from heat, then stir in the vanilla extract.

        Combine Mixtures: Pour the melted nut butter mixture over the dry ingredients. If using, also add in the mini chocolate chips. Mix everything thoroughly with a spatula or your hands until all the dry ingredients are evenly coated.

          Transfer to Pan: Transfer the mixture into the prepared baking dish. Use a piece of parchment paper or the back of a spatula to press the mixture firmly and evenly into the pan, ensuring it is tightly packed for better structure when cut.

            Chill and Set: Refrigerate the pan for at least 1-2 hours to allow the bars to firm up. The longer they chill, the easier they will be to cut.

              Cut and Serve: Once the mixture is set, use the overhanging parchment paper to lift the entire block out of the pan. Place it on a cutting board and cut it into bars or squares of your desired size.

                Store: Store the bars in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
