1 cup medjool dates, pitted

1 cup unsweetened shredded coconut

1/2 cup raw almonds (or any preferred nuts)

1/4 cup almond butter (or any nut butter)

1 tsp vanilla extract

1/2 tsp ground cinnamon

A pinch of sea salt

Extra shredded coconut for rolling (optional)

Instructions
 

Prep the Ingredients: Start by ensuring that your medjool dates are pitted and moist. If they seem dry, soak them in warm water for about 10 minutes, then drain.

    Blend the Nuts: In a food processor, add the raw almonds. Pulse until they are finely chopped but not turned into a powder. You want some texture!

      Combine the Mixture: Add the pitted dates, 1 cup of shredded coconut, almond butter, vanilla extract, ground cinnamon, and sea salt to the food processor with the chopped almonds. Blend until the mixture is sticky and well combined, scraping down the sides of the bowl as necessary.

        Form the Bites: Once the mixture is well combined, take about 1 tablespoon of the mixture and roll it into a ball between your palms. Repeat until all the mixture is formed into bites.

          Coat with Coconut: If desired, roll each ball in extra shredded coconut for a delightful finish. This step adds texture and enhances the coconut flavor.

            Chill: Place the coconut date bites in the refrigerator for about 30 minutes to firm up. This step is optional, but it gives them a better texture.
