4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 red bell pepper, sliced

1 zucchini, sliced

3 cloves garlic, minced

1/2 cup chicken broth

1 teaspoon balsamic vinegar

1 cup fresh basil leaves, torn

1 cup shredded mozzarella cheese

Instructions
 

Prep the Chicken: Season the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper on both sides.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the cherry tomatoes, red bell pepper, zucchini, and minced garlic. Sauté for 4-5 minutes, or until the vegetables begin to soften.

        Deglaze: Pour in the chicken broth and balsamic vinegar, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

          Combine: Return the chicken to the skillet, nestling it among the vegetables. Sprinkle the torn basil on top, then cover the skillet and let it cook for an additional 2-3 minutes, allowing the flavors to meld and the chicken to heat through.

            Add Cheese: Remove the lid, sprinkle the shredded mozzarella cheese evenly over the chicken and vegetables, and cover again for 2-3 minutes until the cheese is melted and bubbly.

              Serve: Once cooked, remove from heat and garnish with additional fresh basil, if desired. Serve hot, either on its own or over pasta or rice for a heartier meal.
