2 medium zucchinis, grated

6 large eggs

1/4 cup milk (or non-dairy alternative)

1/2 cup feta cheese, crumbled

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

Salt and pepper to taste

8 slices of crusty bread (such as sourdough or ciabatta)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This helps to prevent the frittatas from being too watery.
