1 large zucchini, shredded (about 1 1/2 cups)

1 cup shredded sharp cheddar cheese

4 large eggs

1/2 cup whole milk

1/4 cup finely chopped onion

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for a kick)

1 tablespoon fresh parsley, chopped (for garnish)

Olive oil or non-stick cooking spray for greasing the muffin tin

Instructions
 

Preheat the oven: Begin by preheating your oven to 375°F (190°C). Grease a mini muffin tin with olive oil or non-stick cooking spray to prevent sticking.

    Prepare the zucchini: In a clean kitchen towel or cheesecloth, squeeze out excess moisture from the shredded zucchini. This will ensure your quiche bites don’t turn out soggy.

      Mix the wet ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined.

        Add the dry ingredients: Stir in the flour, garlic powder, salt, black pepper, and cayenne pepper (if using) to the egg mixture. Mix until smooth and all ingredients are well incorporated.

          Combine zucchini and cheese: Fold in the shredded zucchini, chopped onion, and cheddar cheese into the egg mixture until evenly distributed.

            Fill the muffin tin: Spoon the quiche mixture into the prepared mini muffin tin, filling each cup about 3/4 full. This will allow them to rise without overflowing.

              Bake: Place the muffin tin in the oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
