Mini Tuna Salad Toast Circles

1 can (5 oz) of solid white tuna in water, drained

2 tablespoons mayonnaise (adjust for creaminess preference)

1 teaspoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)

1 small celery stalk, finely chopped

1 small red onion, finely chopped

Salt and pepper to taste

4 slices of whole-grain bread

1 tablespoon olive oil

Lettuce leaves for garnish (optional)

Cherry tomatoes, halved, for garnish (optional)

Instructions
 

In a medium-sized bowl, combine the drained tuna, mayonnaise, Dijon mustard, and lemon juice. Mix until well blended.

    Gently fold in the chopped dill, celery, and red onion. Season with salt and pepper to taste. Adjust the mayonnaise and mustard if needed for your preferred flavor.

      Use a round cookie cutter or a sharp knife to cut the whole-grain bread into circles (about 2-3 inches in diameter).

        Heat a skillet over medium heat and add the olive oil. Once hot, toast the bread circles for about 2-3 minutes on each side until golden brown and crispy. Remove and let them cool slightly.

          Once the bread circles have cooled, generously spoon the tuna salad mixture onto each circle, spreading it out evenly.

            If desired, top with a small piece of lettuce and a half cherry tomato on each toast circle for a pop of color and freshness.

              Serve immediately as a delightful appetizer or party snack!
