Ingredients

2 large cucumbers

1 can (5 oz) of tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 teaspoon Dijon mustard

1 teaspoon lemon juice

1 tablespoon diced red onion

1 tablespoon chopped fresh dill (or parsley)

Salt and pepper, to taste

1/4 cup cherry tomatoes, halved (for garnish)

Optional: Sliced olives or avocado for topping

Instructions

Prepare the Cucumbers: Cut the cucumbers in half lengthwise. Using a spoon, gently scoop out the seeds and some flesh to create a 'boat' shape. Pat the insides dry with a paper towel to remove excess moisture.

Make the Tuna Filling: In a medium bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, diced red onion, and chopped dill. Mix well until the ingredients are thoroughly combined. Season with salt and pepper to taste.

Fill the Cucumber Boats: Generously spoon the tuna mixture into each cucumber half, making sure to fill them well. You can mound the mixture above the cucumber for a visually appealing presentation.

Garnish: Top each filled cucumber boat with halved cherry tomatoes, and if desired, add slices of olives or avocado for extra flavor and color.

Chill and Serve: Arrange the completed tuna cucumber slider boats on a serving platter. For the best flavor, chill in the refrigerator for about 15 minutes before serving.
