Mini Spinach Artichoke Puff Melts

1 sheet frozen puff pastry, thawed

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup cream cheese, softened

½ cup sour cream

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 egg, beaten (for egg wash)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat & Prep Puff Pastry:

    Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheet on a lightly floured surface and cut it into 2-inch squares.

      Make the Filling:

        In a large mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan, mozzarella, minced garlic, onion powder, salt, and black pepper. Mix until well combined and smooth.

          Assemble the Melts:

            Place a heaping teaspoon of the spinach-artichoke filling in the center of each puff pastry square. Fold the corners of the pastry over the filling to create little pockets or triangles, pinching the edges to seal.

              Brush with Egg Wash:
