6 large eggs

1/2 cup roasted red peppers, finely chopped

1/4 cup crumbled feta cheese

1/4 cup shredded mozzarella cheese

1/4 cup milk

1 tablespoon olive oil

2 tablespoons fresh basil, chopped

Salt and pepper to taste

Cooking spray or oil for greasing the muffin tin

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Muffin Tin: Lightly grease a mini muffin tin with cooking spray or a little oil to prevent sticking.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk until fully blended. Add in the milk, olive oil, salt, and pepper, and mix well.

        Add Ingredients: Fold in the roasted red peppers, crumbled feta, shredded mozzarella, and chopped basil into the egg mixture until evenly distributed.
