Mini Pancake Sandwiches with Apple Butter

1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons melted butter

Cooking spray or additional butter for the skillet

For the Filling:

½ cup apple butter

¼ teaspoon cinnamon (optional)

Fresh apple slices (for garnish)

Chopped nuts (like walnuts or pecans, for crunch, optional)

Instructions
 

Prepare the Pancake Batter:

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; do not overmix.

      Heat the Skillet:

        Place a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.

          Cook the Mini Pancakes:

            For each mini pancake, pour about 2 tablespoons of batter onto the skillet. Cook for 1-2 minutes or until bubbles form on the surface and the edges look set.
